Chocolate Zucchini Muffins
Ingredients:
1 1/4 cup whole wheat flour
1/3 cup cacao powder
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons coconut oil
1/3 cup honey or maple syrup
1 teaspoon vanilla
1 egg
1 cup grated zucchini (from about 1 medium zucchini)
1 ripe mashed banana
1/2 cup unsweetened almond milk
1/2 cup cacao nibs, if desired
Method:
Preheat oven to 180C.
Squeeze excess water from grated zucchini with a tea towel or paper towel.
In a medium bowl, mix together flour, cacao, baking soda, and salt.
In a separate bowl, whisk together coconut oil, honey/maple syrup, vanilla and egg. Add in zucchini, banana and almond milk. Mix again.
Slowly add in dry ingredients and mix until just combined. Gently fold in cacao nibs (if using).
Divide batter evenly into lined/greased muffin tin. Bake 22-25 minutes or until toothpick inserted into the middle comes out clean.
