Banana Egg Pancakes

Ingredients:

  • 1 banana

  • 1-2 eggs

  • Optional extras: Grated veggies, cinnamon, vanilla, bone broth

  • Toppings: Sweet (nuts, seeds, fruit, yogurt) or savoury (spinach, mushrooms etc.)

Method:

  1. Mash banana in a bowl. Add eggs and whisk together.

  2. Add butter to a frypan. Cook like a pancake until egg is just cooked.

  3. Serve plain or add toppings.
