Nutrient Dense Sushi
Ingredients:
4 sheets of nori (seaweed)
2 cups cooked rice
1-2 avocados
Cooked protein of choice (tinned tuna is a good back-up option)
Sauerkraut (or other vegetables like cucumber, capsicum, carrot)
Mayo (recommend the Gevity Rx brand)
To serve: Tamari or coconut aminos
Method:
Mash rice and avocado until well mixed and sticking together.
Spread mixture over a seaweed sheet, leaving a 2cm strip along the side furthest away from you.
Arrange meat, sauerkraut and mayo along the side closest to you, also leaving a 2cm strip.
Roll everything up tightly and secure by slightly wetting the edge (if required).
Cut with a sharp knife, then serve with coconut aminos or tamari.
