Nutrient Dense Sushi

Ingredients:

  • 4 sheets of nori (seaweed)

  • 2 cups cooked rice

  • 1-2 avocados

  • Cooked protein of choice (tinned tuna is a good back-up option)

  • Sauerkraut (or other vegetables like cucumber, capsicum, carrot)

  • Mayo (recommend the Gevity Rx brand)

  • To serve: Tamari or coconut aminos

Method:

  1. Mash rice and avocado until well mixed and sticking together.

  2. Spread mixture over a seaweed sheet, leaving a 2cm strip along the side furthest away from you.

  3. Arrange meat, sauerkraut and mayo along the side closest to you, also leaving a 2cm strip.

  4. Roll everything up tightly and secure by slightly wetting the edge (if required).  

  5. Cut with a sharp knife, then serve with coconut aminos or tamari.
