Pumpkin, Spinach and Feta Pie

Ingredients:

  • 100g pumpkin, diced into 1-2cm cubes

  • 100g feta cheese, coarsely crumbled

  • 2 cups baby spinach

  • ¼ red onion, thinly sliced

  • 8-10 eggs

  • 1 tablespoon Gevity Rx Body Glue (optional but recommended)

  • ¼ cup pine nuts

  • Optional extras: Zucchini (grated), carrot (grated), capsicum (sliced or diced), or any vegetable that needs using up!

  • Variations: Add a sheet of puff pastry to the base.

Method:

  1. Preheat oven to 180C.

  2. Grease/line a baking dish (or muffin tray) with parchment paper.

  3. Place pumpkin, feta, baby spinach and red onion in the baking dish.

  4. Add eggs and bone broth to a bowl and whisk until combined.

  5. Pour into baking dish. Sprinkle with pine nuts.

  6. Bake in oven for about 30 mins (or until eggs are cooked).
