Pumpkin, Spinach and Feta Pie
Ingredients:
100g pumpkin, diced into 1-2cm cubes
100g feta cheese, coarsely crumbled
2 cups baby spinach
¼ red onion, thinly sliced
8-10 eggs
1 tablespoon Gevity Rx Body Glue (optional but recommended)
¼ cup pine nuts
Optional extras: Zucchini (grated), carrot (grated), capsicum (sliced or diced), or any vegetable that needs using up!
Variations: Add a sheet of puff pastry to the base.
Method:
Preheat oven to 180C.
Grease/line a baking dish (or muffin tray) with parchment paper.
Place pumpkin, feta, baby spinach and red onion in the baking dish.
Add eggs and bone broth to a bowl and whisk until combined.
Pour into baking dish. Sprinkle with pine nuts.
Bake in oven for about 30 mins (or until eggs are cooked).
